Salt Flats or the Art and Science of Harvesting Salt

Ever since visiting Île d’Oléron (on the French coast north of Bordeaux), where salt is harvested, salt has been on my mind. Eating salt is essential, but – to be beneficial for health – the kind and quality of salt are essential as well. I was told that, at some places, the art and science of harvesting salt as they do on this island traditionally is taught from generation it generation, as many factors like temperature, humidity, winds, moon phase, darkness, and so on must be considered. Here on the island, the little town has the most colorful houses.
